1. Peel and slice the carrots into approximately 1cm thick rounds. Set aside.
2. Peel and finely chop the onions. Set aside.
3. Clean and thinly slice the mushrooms, about 0.5cm thick. Set aside.
4. Prepare a roux:
In a large pot, melt the margarine over medium heat. Once completely melted, add the flour and mix. Let it heat until small bubbles appear on the surface.
5. In the pot, add the vegetable broth, carrots, onion(s), mushrooms, thyme sprigs, and bay leaves.
6. Cover and simmer over low heat for 15 to 20 minutes (carrots should be tender).
7. Add the seitan, cut into pieces, and the heavy cream.
(It's time to start cooking the rice)
8. Cover and simmer for another 10 minutes. The texture should be thick and opaque.
9. Serve hot, with rice.
Notes & Suggestions
Soy slices, such as "le bon vegetal," are a great substitute for seitan.
