1. Prepare the pie crust: mix the flour, sugar, and salt. Incorporate the coconut oil by hand until the mixture resembles coarse crumbs. Pour in the plant-based milk and mix until a smooth dough forms.
2. Preheat the oven to 180°C (350°F). Roll out the pie crust and line a 24 cm (9-inch) pie dish.
3. Prepare the filling: blend all the ingredients together in a blender.
4. Pour the filling into the pie crust and bake for 40-50 minutes.
5. Allow to cool and serve with whipped cream or lightly sweetened thick coconut cream :)
