Peppery Potato Soup

Instructions

  • 1.   Clean the leek well and cut it into slices, also put the green stems which look tender, do not put the older ones.
  • 2.   Peel the potatoes and cut them into quarters.
  • 3.   Cut the onion in 4.
  • 4.   Put the vegetable broth in cold water and add the vegetables.
  • 5.   Boil, cover and cook for 1 hour.
  • 6.   Mix everything, salt and pepper.
  • 7.   Roughly chop the parsley and add it. Leave to cook for 5 minutes on low heat.
  • 8.   Enjoy your meal !!
