Instructions

  • 1.   Thoroughly clean the leek and cut it into slices, including the tender green parts, but not the older ones.
  • 2.   Peel the potatoes and cut them into quarters.
  • 3.   Cut the onion into quarters.
  • 4.   Dissolve the vegetable broth in cold water and add the vegetables.
  • 5.   Bring to a boil, cover, and let it cook for about 1 hour.
  • 6.   Blend everything together, season with salt and pepper.
  • 7.   Roughly chop the parsley and add it. Let it cook for another 5 minutes on low heat.
  • 8.   Enjoy your meal!
