. Thoroughly clean the leek and cut it into slices, including the tender green parts, but not the older ones.

. Peel the potatoes and cut them into quarters.

. Cut the onion into quarters.

. Dissolve the vegetable broth in cold water and add the vegetables.

. Bring to a boil, cover, and let it cook for about 1 hour.

. Blend everything together, season with salt and pepper.

. Roughly chop the parsley and add it. Let it cook for another 5 minutes on low heat.

. Enjoy your meal!
