Sweet Potato and Coconut Milk Velouté with Thermomix

The sweet potato and coconut milk velouté with Thermomix is a wonderful bowl of sunshine when it's gray and cold outside. Sweet potatoes bring a charming sweetness and the roasted chickpea croutons add a pleasant crunch, spiciness, and provide protein and fiber to the dish. This velouté is warm and healthy. The chickpea croutons are an alternative to traditional croutons and can also be a replacement for chips during movie nights. Instructions

  • 1.   Place 2 quartered red onions in the Thermomix bowl.
  • 2.   Add 4 cloves of garlic to the Thermomix bowl.
  • 3.   Add 2 sprigs of fresh coriander to the Thermomix bowl.
  • 4.   Place the lid with the measuring cup on.
  • 5.   Mix for 5 sec/speed 5.
  • 6.   Scrape down the sides of the bowl with the spatula.
  • 7.   Add 1 teaspoon of turmeric to the Thermomix bowl.
  • 8.   Add 2 pinches of pepper to the Thermomix bowl.
  • 9.   Add 2 tablespoons of olive oil to the Thermomix bowl.
  • 10.   Place the lid with the measuring cup on.
  • 11.   Sauté for 2 min 30 sec/120°C/speed 1.
  • 12.   Add 750 grams of peeled and cubed sweet potatoes to the Thermomix bowl.
  • 13.   Add 400 grams of coconut milk to the Thermomix bowl.
  • 14.   Add 560 grams of water (adjust according to taste) to the Thermomix bowl.
  • 15.   Add 1 vegetable bouillon cube to the Thermomix bowl.
  • 16.   Add the juice of ½ lime to the Thermomix bowl.
  • 17.   Place the lid with the measuring cup on.
  • 18.   Cook for 40 min/100°C/speed 1.
  • 19.   Mix for 40 sec/speed 6. Gradually increase the speed up to 10.
  • 20.   Serve immediately.
  • 21.   Garnish the plates with chickpea croutons and a few fresh coriander leaves.
