Carrot and Coriander Soup

Instructions

  • 1.   Sauté the onion in oil in a covered sauté pan until it becomes lightly golden (approximately 10 min).
  • 2.   Add the ground garlic and coriander. Add the carrots and potato, then mix everything together. Pour in the broth, zest, salt and pepper (to taste), and let simmer for 25 min.
  • 3.   Blend the soup while adding fresh coriander.

Ingredients for servings

  • 1 onion
  • 2 tablespoon of oil
  • 1 garlic
  • 2 teaspoon of ground coriander
  • 650 g of carrot
  • 220 g of potato
  • 1 liter of vegetable broth
  • 1 orange zest
  • 1 fresh coriander
  • 1 pinch of pepper
  • 1 pinch of salt
