Vegetable tagine with olives

Instructions

  • 1.   Wash, peel and dice the vegetables.
  • 2.   Slice the onion, chop the garlic and brown them in olive oil for 5 minutes. Mix with the spices.
  • 3.   Add the diced vegetables, halved olives and broth. Cover and simmer for 1/2 hour.
  • 4.   Garnish with parsley or coriander before serving on a bed of couscous with a dash of harissa.
