. Wash, peel and dice the vegetables.

. Slice the onion, chop the garlic and brown them in olive oil for 5 minutes. Mix with the spices.

. Add the diced vegetables, halved olives and broth. Cover and simmer for 1/2 hour.
4
. Garnish with parsley or coriander before serving on a bed of couscous with a dash of harissa.
