Sweet and Sour Cucumber Salad (Thailand)

Instructions

  • 1.   Wash and cut the cucumber into 4 lengthwise, then into small triangles.
  • 2.   Put the vinegar and sugar in the microwave for 30 seconds (until you get a syrupy and sweet-sour mixture).
  • 3.   In a salad bowl, place the cucumber, shallots, cilantro, and peanuts and drizzle with the sweet and sour juice.
  • 4.   Serve chilled with Asian dishes, at a barbecue, or with grilled meats in general.

  • 1 stalk of fresh coriander
