Wheat Tortillas in the Thermomix

Here is a simple and quick recipe for homemade tortillas. It is a Mexican bread that resembles a pancake and is cooked in a pan. This way, you can make your own wraps, burritos, fajitas, etc. All you have to do is find your filling ;-)

Instructions

  • 1.   Put 130 grams of water in the Thermomix bowl.
  • 2.   Add the lid with the measuring cup.
  • 3.   Heat for 2 min/37°C/speed 2.
  • 4.   Add 280 grams of flour to the Thermomix bowl.
  • 5.   Add 30 grams of olive oil to the Thermomix bowl.
  • 6.   Add 1 teaspoon of salt to the Thermomix bowl.
  • 7.   Add the lid with the measuring cup.
  • 8.   Knead for 3 min/kneading speed.
  • 9.   You should obtain a very soft but not sticky dough. Form a ball with it.
  • 10.   Wrap it in plastic film and let it rest for 30 min.
  • 11.   Divide the dough into 4 balls of about 100g each and roll out 4 discs with a diameter of 25cm using a rolling pin. The dough should be thin enough as it will shrink during cooking.
  • 12.   Cook in a pan with a knob of butter for 1 to 2 min on each side.
  • 13.   As they cook, cover the tortillas with a plate or lid to keep them moist, otherwise they may break.
