Many countries claim its paternity to the point that there is even talk of a "hummus war"! The true country of origin is therefore uncertain, but it is claimed by at least 8 of them, mainly Palestine, Lebanon, and Israel. Greece, Turkey, Jordan, Syria, and to a lesser extent Egypt also claim it. As you can imagine, there are many different recipes, each with its own twist.
