Potimarronade or potimarron puree

Instructions

  • 1.   Finely chop the garlic, parsley, and onion.
  • 2.   Cut the potimarron into 4 cm wide slices.
  • 3.   Peel each slice and remove the seeds.
  • 4.   Cut each slice into 0.5 cm thick strips.
  • 5.   In a large pot, sauté the potimarron with oil.
  • 6.   Add salt, garlic, onion, parsley, thyme, and pepper.
  • 7.   Let it slowly melt for 30 minutes over medium heat, stirring regularly.
  • 8.   Add water if needed to prevent sticking.
  • 9.   Stir until you obtain a coarse puree. It's ready. Adjust the consistency according to taste!

  • 1 onion
  • 3 stalk of parsley
  • 2 teaspoon of thyme
  • 5 tablespoon of oil
  • 2 pinch of salt
  • 1 pinch of pepper
