Lemon Syrup with Thermomix

Here's how to make a delicious 100% natural lemon syrup with Thermomix, guaranteed without any preservatives or coloring :) The longest part of the recipe is squeezing all the lemons to extract the juice. However, you can easily reduce the quantities by half, and it will still work very well. With this homemade syrup recipe, you get a beautiful natural color, nothing like the ones you find in stores. It's perfect for classic use as a syrup with water: diluted and sipped as a refreshing lemonade, it's great. But this syrup can also be used in desserts to soak cakes. Instructions

  • 1.   It is possible to buy 100% lemon juice directly or to squeeze it yourself, using approximately 1.5 kilograms of fruit to obtain 500 grams of juice.

    Put 100 grams of powdered sugar and 1 lemon zest in the Thermomix. Grind for 10 sec/speed 10. Then scrape the sides of the bowl with a spatula.
  • 2.   Grind for 5 sec/speed 10.
  • 3.   Add 500 grams of powdered sugar and 500 grams of lemon juice to the Thermomix. Cook for 16 min/105°C/speed 2 without the measuring cup.
  • 4.   To remove any impurities, strain the syrup using a sieve.
  • 5.   Transfer to a bottle and store in the fridge.

Notes & Suggestions

  • To obtain 500 grams of lemon juice, you will need approximately 1.5 kilograms of lemons.
    Preferably use organic lemons or at least one lemon from which you need to zest.
