Instructions

  • 1.   Prepare the couscous according to the package instructions.
  • 2.   Wash the tomato and cucumber, then dice them. Peel and finely chop the shallot. Finely chop the mint. Finely chop the parsley.
  • 3.   Rehydrate the raisins in cold water for 5 minutes.
  • 4.   Mix the couscous with the remaining ingredients and 2 tablespoons of olive oil.

Notes & Suggestions

  • You can replace couscous with bulgur, cassava couscous, or quinoa.
