Tomato and Feta Omelette

Instructions

  • 1.   Beat the eggs with milk, salt, pepper, and Herbes de Provence.
    Rinse the tomatoes, remove the stems, and slice the flesh into rounds.
  • 2.   In a pan, heat 1 tsp of oil and add 1/4 of the egg mixture.
    When the bottom is firm, place the tomato slices and crumbled feta on top.
    Cover the pan and cook for another 6 to 8 minutes.

  • 8 eggs
  • 150 ml of milk
  • 1 teaspoon of Provence herb
  • 4 tomatoes
  • 4 teaspoon of oil
  • 200 g of feta
  • salt (according to taste)
  • pepper (according to taste)

    It was great but I only used half of the feta, it seemed like too much otherwise. And the recipe forgets to mention adding 3/4 of eggs at the end ;)
