Chickpea, Artichoke, and Tomato Salad

You can add a few marinated sun-dried tomatoes (to be counted) to this delicious salad!

Instructions

  • 1.   In a bowl, mix together chickpeas, artichoke hearts, cherry tomatoes, bean sprouts, chopped basil and chives. Make a dressing with lemon juice, mustard, soy sauce, and a small pinch of chili.
  • 2.   Add the dressing to the salad, mix well, then arrange in 2 pretty bowls. Sprinkle some grated lemon zest on top. Chill until ready to serve.

  • 100 g of chickpeas (canned, drained weight)
  • 2 artichoke hearts
  • 10 cherry tomatoes
  • 20 g of soybean sprout
  • 6 teaspoon of fresh basil
  • 3 teaspoon of chives
  • 40 ml of lime juice
  • 1 lime
  • 2 teaspoon of mustard
  • 1 tablespoon of soy sauce
  • 2 g of powdered chili
