Apple and Ginger Butternut Squash Soup

Instructions

  • 1.   Heat 1 tsp of oil in a large pot and sauté the onion, apple, and carrot for 3 - 4 minutes. Add the ginger and mix well.
  • 2.   Add the butternut squash and broth. Bring to a boil, then simmer uncovered for 20 minutes, until the vegetables are tender.
  • 3.   Blend the soup until smooth, reheat, and season with chili or nutmeg, salt, and pepper. Serve, sprinkled with finely chopped fresh herbs.
