Instructions

  • 1.   Clean the onion before peeling it. Then, roughly chop it.
  • 2.   Wash the eggplant, zucchini, and bell peppers. Then, cut these vegetables into medium-sized cubes.
  • 3.   Sauté all these ingredients in olive oil over high heat.
  • 4.   Season everything with salt and pepper. Then, add thyme and bay leaf.
  • 5.   Simmer the preparation covered for 45 minutes.
