Raw Provençal Zucchini Salad

Instructions

  • 1.   - Do not peel the zucchini.
  • 2.   Cut them in half (lengthwise) and remove the central seeds.
  • 3.   Using a peeler, make thin strips always in the direction of the length.
  • 4.   - In a salad bowl, mix: vinegar, oil, garlic, salt, pepper, and thyme.
  • 5.   Add the zucchini.
  • 6.   Cover and refrigerate for at least 15 minutes.

  • 1 stalk of thyme
  • 3 tablespoon of balsamic vinegar
  • 1 tablespoon of wine vinegar
  • 3 tablespoon of olive oil
  • salt (according to taste)
