1. Preheat the oven to 200°C. Roast 250 g of hazelnuts for 7 to 10 minutes.
2. Meanwhile, blend 170 g of sugar and 10 g of vanilla sugar into powdered sugar for 20 seconds/speed 10.
Personally, I don't use vanilla sugar, I make it myself by leaving a vanilla pod in 1 kg of sugar in an airtight container.
3. At the end of the hazelnut roasting, transfer them to a damp cloth.
Close the cloth and massage the hazelnuts through the fabric. The goal is to remove the hazelnut skins for a smooth texture.
4. Add the still warm hazelnuts to the powdered sugar remaining in the Thermomix bowl, then blend for 2 minutes/speed 6.
5. Now add all the other ingredients and blend again for 2 minutes/speed 6.
6. The spread will thicken slightly as it cools. It can be stored in a pantry (or in the fridge if you prefer a firmer texture) for several weeks!
