Cauliflower Croquettes (gluten-free, dairy-free)

A very original way to cook cauliflower. Definitely worth a try, it's tasty, soft, and super easy to make.

Instructions

  • 1.   Remove the florets from your cauliflower and save the stems to make a soup, for example.
  • 2.   Cook the florets in salted boiling water or steam them until tender. Drain and transfer them to a bowl. Mash them with a fork or a potato masher.
  • 3.   Preheat your oven to 190°C (375°F).
  • 4.   Add the breadcrumbs and mix.
  • 5.   Add the cheese and a little salt.
  • 6.   Add an egg and mix well.
  • 7.   Finely chop the chives over the bowl using a pair of scissors and mix. Taste and adjust the seasoning if necessary.
  • 8.   Shape about ten croquettes with your hands. Regularly wet your hands to make smooth croquettes. Place them on a baking sheet lined with parchment paper as you go.
  • 9.   Brush the croquettes with olive oil and bake for about fifteen minutes, until golden brown. Serve warm with a small sauce.

  • 100 g of grated sheep cheese
  • 30 g of gluten-free breadcrumbs
  • 1 teaspoon of chives
  • 1 tablespoon of olive oil
  • 2 pinch of nutmeg
  • salt (according to taste)
