Pumpkin Briochettes

Instructions

  • 1.   Dissolve the yeast in warm milk.
    Mix all the wet ingredients, including the softened butter, then add the flour.

    Mix all the elements together. If the dough is too sticky, add a little flour.

    Knead for 10 minutes with a dough mixer or longer by hand.

    Cover with a cloth and let rise for 2 hours, until the dough doubles in size.

    Place the risen dough on a lightly floured work surface and lightly knead it without completely deflating it.

    Shape the dough into balls (between 16 and 20 balls depending on the size) and place them on a baking sheet lined with parchment paper.

    Leave enough space between the balls so that they don't stick together too much during baking.

    Cover and let rise until they double in size (about 1 hour).

    Brush the brioches with a mixture of egg yolk and a tablespoon of milk,
    sprinkle with sliced almonds, sugar, or sesame seeds (optional).

    Bake in the oven at 180°C (350°F) for 20 minutes.
    Cook in an air fryer at 150°C (300°F) for 8 minutes.

Notes & Suggestions

  • You can add raisins or chocolate chips; add them during the shaping step of the briochettes.
    You can replace vanilla with cinnamon.
    You can use any type of squash, but pumpkin gives a very orange color.

  • 1 bag of dried baker's yeast
  • 50 g of butter
  • 90 g of sugar
  • 1 teaspoon of vanilla extract
  • ½ teaspoon of salt
