Ratatouille in the Thermomix

To make a good and authentic ratatouille in the Thermomix, you need good vegetables that have already seen the earth, the sun, and as few pesticides as possible. Keep the skin on, so it's better to buy organic. The common ingredients in any respectable ratatouille are zucchini, eggplant, tomatoes, bell peppers, onions, and olive oil, often with garlic and a bouquet garni. In Nice, olives are often added as well. Ratatouille is originally a culinary specialty from Nice and Provence. Instructions

  • 1.   Place 1 yellow onion cut in half and 3 cloves of garlic in the Thermomix. Mix 5 sec/speed 5. Then scrape the sides of the bowl with the spatula.
  • 2.   Add 20 grams of olive oil, 1 teaspoon of herbes de provence, and 1 bay leaf to the Thermomix. Cook 5 min/100°C//speed 1.
  • 3.   Add 1 tablespoon of vegetable stock, 300 grams of tomatoes cut into quarters, 50 grams of red bell peppers cut into pieces, 50 grams of yellow bell peppers cut into pieces, and 50 grams of green bell peppers cut into pieces to the Thermomix. Cook 14 min/100°C// with the varoma instead of the measuring cup on the lid of the bowl to prevent splattering.
  • 4.   Add 1 teaspoon of salt (adjust to taste), 2 pinches of pepper (adjust to taste), 200 grams of zucchini cut into pieces, and 300 grams of eggplant cut into pieces to the Thermomix. Cook 22 min/100°C//.
  • 5.   Serve hot.
