Instructions

  • 1.   Recipe indicated on the back of the split pea box.
  • 2.   Peel and slice the carrot, peel and finely chop the onion. Bring a large pot of salted water to a boil.
  • 3.   Add the split peas, onion, carrot, and bouquet garni to the boiling water. Let cook for 35 minutes over medium heat.
  • 4.   Drain the peas, reserving the cooking water, and crush them using a vegetable mill. Incorporate cooking water according to your taste.
  • 5.   This puree should remain quite thick, you can add croutons and parsley toast to enjoy the puree.
