Lemon and chive mushroom salad

Instructions

  • 1.   Remove the stems and wash the mushrooms, then thinly slice only the caps.
  • 2.   Add the chopped chives.
  • 3.   Make a dressing with lemon juice, half olive oil, half sunflower oil, salt, and pepper.
  • 4.   Mix well and taste to see if more oil or lemon juice needs to be added (be careful not to make it too acidic! It's better to add less and adjust gradually than the other way around...).
  • 5.   Serve chilled.

  • 1 teaspoon of sunflower oil
