Instructions

  • 1.   Preheat the oven to 220 ° C / 425 ° F. Cover with foil a baking sheet.
  • 2.   Slice the avocados in half lengthwise and remove the core.
  • 3.   Using a spoon, remove about a spoonful or more of avocado flesh to create a hollow large enough to deposit an egg.
  • 4.   Put the avocados on the plate and fold the foil around the avocados to prevent them from tipping over.
  • 5.   Alternatively put each lawyer in a ramekin. Break one egg into each avocado half taking care not to break the yolk. Add salt and pepper to taste. Add a pinch of Cayenne.
  • 6.   Place in the center of the oven and bake 15-18 min. Or until the whites have seared and the yolks are still a little runny.
  • 7.   Garnish with chopped chives and serve.
