Avocado Baked Eggs

Instructions

  • 1.   Preheat the oven to 220°C / 425°F. Line a baking sheet with aluminum foil.
  • 2.   Slice the avocados in half lengthwise and remove the pit.
  • 3.   Using a spoon, scoop out about a tablespoon or more of avocado flesh to create a hollow large enough to hold an egg.
  • 4.   Place the avocados on the baking sheet and fold the aluminum foil around the avocados to prevent them from tipping over.
  • 5.   Alternatively, place each avocado half in a ramekin. Crack an egg into each avocado half, being careful not to break the yolk. Season with salt and pepper to taste. Add a pinch of Cayenne pepper.
  • 6.   Place in the center of the oven and bake for 15-18 minutes or until the whites are set and the yolks are still slightly runny.
  • 7.   Garnish with chopped chives and serve.
