Zucchini Bread

Zucchini bread is quick to prepare. It is a versatile recipe. Indeed, this zucchini bread can be served in thin slices as an appetizer, in larger portions as a main dish, accompanied by a salad and sautéed potatoes, or it can be sliced and served as a zucchini cake for a cocktail or a dinner party.

Instructions

  • 1.   Peel a few zucchinis (depending on size), cut them into small cubes, then sauté them in olive oil for 20 to 25 minutes with minced garlic, salt, pepper, and basil.
  • 2.   In a separate bowl, beat 4 eggs vigorously, then incorporate the heavy cream and breadcrumbs. Mix everything with the zucchinis.
  • 3.   Bake for about 45 minutes in a greased loaf pan lined with zucchini slices.
  • 4.   Serve warm or cold.

  • 50 g of medium wheat semolina
  • 100 g of grated emmental

    The ingredients list says 1 egg but the recipe indicates 4? There is a shallot mentioned but no instructions regarding it: I assume it should be added with the garlic? Is it semolina, breadcrumbs, or either one interchangeably? When should the cheese be added? The recipe sounds tempting though.

    Semolina, grated cheese, shallot, and turmeric are not mentioned!?? I added everything and replaced the cream with 30cl of milk and the breadcrumbs with fine semolina.
