Low-carb Zucchini Carpaccio

Instructions

  • 1.   Slice the raw zucchini into thin rounds (as thin as possible) and spread them out on a plate. Drizzle the zucchini with a little olive oil.
  • 2.   Toast the pine nuts in a pan for 10 minutes.
  • 3.   Sprinkle the pine nuts, Parmesan shavings, and freshly chopped basil over the zucchini.
  • 4.   Enjoy, it's delicious...

  • 2 zucchinis
  • 1 bag of pine nut
  • 1 bag of parmesan
  • 1 stalk of fresh basil
  • 1 olive oil
