1. Slice the raw zucchini into thin rounds (as thin as possible) and spread them out on a plate. Drizzle the zucchini with a little olive oil.
2. Toast the pine nuts in a pan for 10 minutes.
3. Sprinkle the pine nuts, Parmesan shavings, and freshly chopped basil over the zucchini.
