Corn fritters

Some mornings, only something sweet, salty, and fried will cure your woes. These simple fritters quickly come together with pantry and freezer ingredients. As long as you're careful enough to handle a few inches of hot oil, getting a few corn fritters on the table only takes a few minutes and the ingredients are simple.

Instructions

  • 1.   Melt the butter.
  • 2.   Take a mixing bowl and combine the flour with 1 tablespoon of baking powder.
  • 3.   Season with salt and pepper.
  • 4.   In another bowl, mix together the eggs, milk, and melted butter.
  • 5.   Then add in 14 oz of drained corn and mix again.
  • 6.   Pour one mixture into the other, then stir carefully.
  • 7.   Heat a skillet and grease it enough to cook the fritters.
  • 8.   Drop spoonfuls of batter into the skillet and cook until golden brown.
  • 9.   Remove them and place them on paper towels to absorb any excess oil.
  • 10.   Serve.

Notes & Suggestions

  • Dust with a little sugar or drizzle with syrup.
