Light Lemon Curd

Instructions

  • 1.   Dissolve the cornstarch in the juice of 2 lemons, the zest, and the butter. Bring to a boil, then remove from heat and add the egg yolks and sugar. Strain the mixture through a sieve to remove the lemon zest (this is optional). Transfer the lemon curd to a jar and refrigerate.
  • 2.   (you can use 50g of brown sugar or honey and 50g of white sugar)
