2. Wash the tomatoes, zucchini, and potatoes. Peel the potatoes; cut them into thin slices along with the zucchini and tomatoes.
3. Sauté the garlic, onions, and parsley with the garlic sausage in a pan without any fat.
4. To finish
Brush an ovenproof dish with olive oil; layer zucchini, then tomatoes, then potatoes. Pour the contents of the pan on top, then again, a layer of zucchini, a layer of tomatoes, and a layer of potatoes. Drizzle with a little olive oil. Bake for about an hour.
