Instructions
1. Cut off the top of the washed tomatoes and hollow them out.
Season the inside with salt and pepper, and drizzle with a few drops of vinegar.
2. Let the tomatoes drain for 30 minutes, then turn them upside down on a sieve to drain.
Meanwhile, hard-boil the eggs.
Then, mash the tuna, reserving the oil, and mix in the chopped onions and herbs.
3. Crush the anchovy fillets with the hard-boiled egg yolks, add the mustard, salt, pepper, and gradually add the tuna oil, stirring as if making mayonnaise.
4. Mix the two preparations together and fill the tomatoes with the mixture.
Garnish them with black olives and place them on a bed of lettuce.
You can optionally chop the hard-boiled egg whites and use them as a garnish or save them for a later appetizer.
