Stuffed Tomatoes with Tuna

Instructions

  • 1.   Cut off the top of the washed tomatoes and hollow them out.
    Season the inside with salt and pepper, and drizzle with a few drops of vinegar.
  • 2.   Let the tomatoes drain for 30 minutes, then turn them upside down on a sieve to drain.
    Meanwhile, hard-boil the eggs.
    Then, mash the tuna, reserving the oil, and mix in the chopped onions and herbs.
  • 3.   Crush the anchovy fillets with the hard-boiled egg yolks, add the mustard, salt, pepper, and gradually add the tuna oil, stirring as if making mayonnaise.
  • 4.   Mix the two preparations together and fill the tomatoes with the mixture.
    Garnish them with black olives and place them on a bed of lettuce.
    You can optionally chop the hard-boiled egg whites and use them as a garnish or save them for a later appetizer.
