Stuffed Tomatoes with Rice, Pine Nuts, Raisins, and Feta

Instructions

  • 1.   Preheat your oven to 200°C (th.6-7).
  • 2.   Peel and wash the onions, then slice them.
  • 3.   Wash the tomatoes, cut off the tops, and carefully hollow them out using a spoon, while reserving the flesh in a bowl.
  • 4.   Turn your hollowed-out tomatoes upside down on a plate to drain them.
  • 5.   Wash the parsley and mint, then chop them separately in 2 bowls.
  • 6.   In a saucepan, heat the oil and sauté the onions for 3 minutes.
  • 7.   Add the tomato juice, tomato flesh, salt, pepper, 1 teaspoon of sugar, mint, parsley, and water.
  • 8.   Mix and bring to a boil, then add the rice while stirring.
  • 9.   Reduce the heat but maintain a gentle boil.
  • 10.   As soon as the rice is cooked, turn off the heat and add the raisins, then the pine nuts.
  • 11.   Mix thoroughly and let cool.
  • 12.   Stuff the hollowed-out tomatoes with your mixture.
  • 13.   Sprinkle with diced feta.
  • 14.   Bake for 20 minutes.
  • 15.   Serve.
