Salmon and sorrel tart

Instructions

  • 1.   Preheat the oven to 350°F (180°C). Thoroughly wash the sorrel, removing the stems and leaves to obtain a smooth paste. Melt the sorrel in a little butter.
  • 2.   Mix the sorrel with the egg yolk, cream, and smoked salmon in thin strips. Season with a little salt and pepper.
  • 3.   Place the pie crust in a greased 12-inch (30 cm) mold, prick the dough with a fork, and fill with the above mixture.
  • 4.   Bake for about 20 minutes, checking the cooking time.
