Instructions

  • 1.   Preheat the oven to 200°C (th.7). In a bowl, pour the wheat flour. Add the salt, softened butter, hot water, baking powder, and granulated sugar. Knead everything with your fingertips until you obtain a homogeneous dough.
  • 2.   Grease a tart pan, preferably a 22 cm ceramic one. Roll out the dough using a rolling pin and place it in the pan. Prick it with a fork so that it doesn't puff up during baking. Bake for 20 to 30 minutes.
  • 3.   Meanwhile, prepare the lemon cream. In a saucepan, put 250 ml of water, lemon juice, granulated sugar, a pinch of salt, egg yolks, lemon zest, butter, and finally cornstarch. Cook the cream over low heat, whisking regularly, until it thickens. At the end of cooking, pour the lemon cream over the pre-baked tart crust.
  • 4.   Finish by making the meringue. Using an electric mixer, beat the egg whites until stiff peaks form. Incorporate the powdered sugar and spread the meringue over the lemon cream. Use a kitchen blowtorch or bake again for 3 minutes under the broiler. Let it cool before serving.
