Instructions
1. Preheat the oven to 300°F (150°C).
2. In a microwave-safe container, cook the frozen spinach in the microwave for 15 minutes.
3. Season with salt and pepper halfway through cooking, then drain after 15 minutes.
4. Finely chop the spinach on a cutting board.
5. Slice the salmon into strips.
6. Separate the egg yolks and whites into two different bowls.
7. Beat 2 egg yolks with 2 tablespoons of heavy cream, then add a pinch of nutmeg.
8. Season with salt and pepper to taste, then set aside.
9. Beat 2 egg whites until stiff peaks form, then fold them into the previous mixture.
10. Add the spinach, salmon strips, and 1 tablespoon of lemon juice.
11. Mix well, then distribute the mixture into 4 ramekins that have been greased with vegetable margarine.
12. Place the ramekins in a water bath and bake for 20 minutes.
13. Serve immediately!
