Spinach and Smoked Salmon Soufflé

Instructions

  • 1.   Preheat the oven to 300°F (150°C).
  • 2.   In a microwave-safe container, cook the frozen spinach in the microwave for 15 minutes.
  • 3.   Season with salt and pepper halfway through cooking, then drain after 15 minutes.
  • 4.   Finely chop the spinach on a cutting board.
  • 5.   Slice the salmon into strips.
  • 6.   Separate the egg yolks and whites into two different bowls.
  • 7.   Beat 2 egg yolks with 2 tablespoons of heavy cream, then add a pinch of nutmeg.
  • 8.   Season with salt and pepper to taste, then set aside.
  • 9.   Beat 2 egg whites until stiff peaks form, then fold them into the previous mixture.
  • 10.   Add the spinach, salmon strips, and 1 tablespoon of lemon juice.
  • 11.   Mix well, then distribute the mixture into 4 ramekins that have been greased with vegetable margarine.
  • 12.   Place the ramekins in a water bath and bake for 20 minutes.
  • 13.   Serve immediately!
