Melon and Avocado Salad with Smoked Duck Breast

Instructions

  • 1.   Remove the rind and seeds from the melon, cut it into slices.
  • 2.   Peel the avocado and the pear, slice one into slices and dice the other.
  • 3.   Remove the seeds from the pomegranate.
  • 4.   Mix olive oil, balsamic vinegar, salt, and pepper in a bowl.
  • 5.   Divide the salad into the bottom of 4 deep plates. Arrange the slices of melon, avocado, pear, and smoked duck breast on top.
  • 6.   Sprinkle with pine nuts, walnuts, and pomegranate seeds.
