Boursin Spring Rolls

Instructions

  • 1.   Wash the vegetables.
  • 2.   Slice the red bell pepper into thin strips.
  • 3.   Cut the cucumber into sticks about 9 cm long, roughly the length of your spring rolls.
  • 4.   Cut the beef bresaola into 9 cm strips.
  • 5.   Remove the ribs from the lettuce leaves and divide them in half.
  • 6.   Spread the rice paper wrappers on your work surface and moisten them. Place half a lettuce leaf in the center of each rice paper wrapper and spread Boursin cheese on it.
  • 7.   Arrange the cucumber sticks, bell pepper strips, and beef bresaola in alternating layers.
  • 8.   Spread a little more Boursin cheese.
  • 9.   Fold the sides of the wrappers to enclose the filling.
  • 10.   Roll everything up, applying light pressure to ensure that the Boursin cheese mixes well with all the ingredients.
  • 11.   Serve these spring rolls plain or with a herb vinaigrette sauce.
