Instructions

  • 1.   Cook the quinoa according to the instructions. Drain and let it cool.
  • 2.   Peel and dice the cucumber and onions. Rinse and dice the tomatoes. Zest the lemon and squeeze the juice. Finely chop the parsley leaves and crumble the feta cheese.
  • 3.   In a salad bowl, place the quinoa. Add the prepared ingredients, drizzle with olive oil, add salt and pepper, mix well, and keep refrigerated until serving.
