Instructions

  • 1.   Start by washing and peeling your vegetables, then cut the potatoes into pieces and the carrots into slices.
  • 2.   Cut the shallots in half and then slice the leeks.
  • 3.   Place your tomatoes in boiling water, then remove them and dip them in ice water.
  • 4.   Remove the skin and seeds from the tomatoes and cut them into quarters.
  • 5.   In a casserole dish, arrange the vegetables and potatoes, making sure to add minced garlic and bay leaves.
  • 6.   Pour in the white wine and 500 ml of water. Season it and bring it to a boil, covering it.
  • 7.   Add the fish stock and let it all cook over low heat for 20 minutes.
  • 8.   When your fish pot-au-feu is cooked enough, rinse your fish and place it halfway up in the casserole dish with the vegetables.
  • 9.   Let it cook for another 10 minutes, uncovered and over low heat.
  • 10.   All that's left is to serve!
