Leek and Rice Gratin Flavored with Curry

Instructions

  • 1.   Bring water to a boil.
  • 2.   Clean and slice onions and leeks.
  • 3.   Cook the rice in the boiling salted water (about 12 minutes).
  • 4.   Sauté the onions in a little fat.
  • 5.   When they are soft, add the leeks, diced tomatoes, curry, and simmer for 25 minutes (the leeks should be cooked).
  • 6.   In a gratin dish, place 3/4 of the cooked rice.
  • 7.   Pour the leek mixture over the rice, and cover with the remaining rice.
  • 8.   Cut the small goats cheese into thin slices and distribute them on top of the gratin.
  • 9.   Place under the broiler until it is gratinated (it is best to keep an eye on it, as it depends on the oven).
  • 10.   Serve with a small green salad.
