Butternut Squash Gratin

Instructions

  • 1.   Cut the squash in half lengthwise, remove the seeds, and scoop out all the flesh using a melon baller. Keep the two empty halves.
  • 2.   Sauté the pieces of flesh with a little olive oil over low heat. The pieces should be tender.
  • 3.   Make a béchamel sauce. Melt the butter, add the flour and mix with a wooden spoon. Then, using a whisk, gradually add the milk while continuously whisking. Be careful, lumps can form at this stage. When the mixture has thickened, stop cooking and season with nutmeg, salt, and pepper.
  • 4.   Pour the béchamel sauce over the pieces of flesh. Fill the two empty butternut halves with your mixture. Sprinkle some grated cheese on top, and it's ready to bake for 40 minutes at 180°C (350°F).
  • 5.   Mmm, it smells like togetherness!
