Coconut Chicken with Curry and Thai Rice

Instructions

  • 1.   Wash, peel and chop the onions. Cut the chicken into thin slices.
  • 2.   Sweat the onions in olive oil over medium heat, until they are transparent.
  • 3.   Add half the curry, then brown the scallops, stirring occasionally. Salt and pepper.
  • 4.   Lower the heat, and add the ginger, then cover with coconut milk, add the rest of the curry, and coconut chips.
  • 5.   Simmer for ten minutes over very low heat.
  • 6.   Meanwhile, prepare Thai rice, bring a pan of water to a boil. When the water boils, pour the rice, cover and cook for 12-13 minutes.
  • 7.   Turn off the heat, drain the rice and cover again for 5 to 10 minutes so that the steam finishes cooking the rice. The rice should be a bit sticky.
