Sugar-free Chocolate Mousse

. Step 1: Melt the chocolate over low heat.

. Step 2: Prepare the eggs by separating the yolks from the whites.

. Step 3: Put the whites in a large bowl and beat them until stiff peaks form with a pinch of salt.

. Step 4: When the chocolate is melted, add the egg yolks one by one (off the heat), stirring well after each addition.

. Step 5: Then, gradually fold the whites into the chocolate mixture: gently coat the whites with chocolate.

. Step 6: Divide into ramekins and refrigerate for at least 2 hours.

Simple and quick recipe. I added a bit of salted butter instead of salt. Additionally, I added a strawberry and a mint leaf to accompany it all.
