Instructions

  • 1.   Prepare the cookie dough:

    Cream the butter, then add the sugar and mix well.
    Next, add the beaten egg and mix well.
    Incorporate the flour and baking powder - be careful not to overwork the dough.

    Form a dough roll, cover with plastic wrap, and refrigerate for at least 1 hour.

    Prepare the brioche dough:

    Put all the ingredients except the butter in the bowl of a stand mixer and knead for 6 minutes at medium speed.
    If you don't have a stand mixer, first mix the flour, salt, sugar, and powdered milk together.
    Dissolve the yeast in a portion of the water and add the egg.
    Knead the dry ingredients with the yeast mixture and the remaining water for about 10 minutes.

    Add the butter and knead again for 6 minutes at medium speed.

    Form a ball and place it in a container covered with plastic wrap, and let it rise for about 1 hour.
    The dough should double in size.

    Cut the dough into 5 pieces, each weighing about 50-55 g, and shape them into balls.
    Let them rest for about 20 minutes at room temperature.
    Meanwhile, cut the cookie dough into pieces of the same weight (about 30 g each).
    Form a ball and flatten it. Dip the cookie dough in granulated sugar,
    and make lines on the top, which will give it the characteristic melon pan shape.
    Place on a baking sheet and let it rise a second time for about 40 minutes.

    Preheat the oven to 170 °C (340 °F).

    Bake for about 12 to 15 minutes.
    Let cool on a wire rack.

  • 140 g of flour
  • 25 g of powdered sugar
  • ½ teaspoon of salt
  • 5 g of powdered milk
  • 2 beaten eggs
  • 70 ml of hot water
  • 15 g of butter
  • 20 g of brown sugar
