1. Remove the stems from the asparagus and wash them.
2. On a cutting board, cut them into pieces about 2 cm long.
3. Slice the ham into strips.
4. Crack the eggs into a bowl. Beat them to make an omelette.
5. Season them with salt, pepper, and Herbes de Provence.
6. Add the asparagus and ham to the eggs, then mix everything well.
7. Heat 3 tablespoons of olive oil in a frying pan.
8. Pour the mixture into the hot oil and stir with a spatula.
9. Let it cook over medium heat for 4 minutes.
10. During cooking, flip the omelette to cook for another 4 minutes.
