Coffee, Banana, and Walnut Cake

Instructions

  • 1.   Preheat the oven to 220°F.
    Place the walnuts on a baking sheet and roast in the oven for 5 to 7 minutes. Watch carefully to prevent them from burning.
    As soon as you can smell them, they are ready. Remove from the oven and let cool.
    Keep the oven on.
  • 2.   In a small bowl, mix all the topping ingredients: walnuts, 30g of brown sugar, cinnamon. Set aside.
  • 3.   In a large bowl, whisk together the banana, lemon juice, eggs, and 60g of brown sugar.
  • 4.   In another bowl, mix the flour, baking powder, and baking soda.
    Combine with the wet ingredients, alternating with skim milk.
  • 5.   In a silicone circular mold, add half of the topping mixture to the mold.
    Cover with half of the cake batter.
    Add the remaining topping mixture and cover with the remaining cake batter.
  • 6.   Bake for 35 to 40 minutes or until a toothpick comes out clean.
    Let cool completely before removing from the mold.
    Cut into 14 pieces.
