Tomato and Gruyère Crisps

Instructions

  • 1.   Preheat your oven to 425°F (210°C).
  • 2.   Wash the tomatoes, make a light incision on them, and plunge them into boiling water for a few seconds. Peel and deseed them, then cut them into small pieces. Season with salt and pepper.
  • 3.   Spread the sheets of filo pastry on a baking sheet, brush each one with mustard, add some crushed tomatoes and grated Gruyère cheese. Roll up the filo sheets and fold them inward.
  • 4.   Melt the margarine.
  • 5.   Using a brush, brush the crisps with a little melted margarine, then bake them for 15 minutes.
  • 6.   Garnish with a quarter of lime and serve.
