Spicy chorizo casserole on a bed of spinach

Instructions

  • 1.   Preheat the oven to 200°C. Thaw the spinach in the microwave or in a double boiler. Cut the chorizo into slightly thick slices, then into small cubes. Remove the crust from the slices of bread and cut each into 4 strips.
  • 2.   Butter the ramekins (or cocottes), then distribute the spinach, crack an egg on top and add 1 tbsp of cream.
  • 3.   Season with salt and pepper and distribute the cubes of chorizo.
  • 4.   Place the ramekins in an ovenproof dish.
  • 5.   Add a little hot water to the dish.
  • 6.   Bake for 6 to 10 minutes.
  • 7.   Keep a close eye on the cooking! The egg yolks should not cook. While cooking, prepare the toast soldiers.
  • 8.   Melt the 20g of butter in a large skillet.
  • 9.   As soon as it foams, place the strips of bread in the skillet and turn them several times until they have a nice golden color.
  • 10.   Peel the garlic clove, cut it in half, remove the germ and gently rub the toast soldiers with it.
  • 11.   Remove the eggs from the oven and serve with the garlic toast soldiers. A recipe created by Marque Repère.
