1. Preheat the oven to 200°C. Thaw the spinach in the microwave or in a double boiler. Cut the chorizo into slightly thick slices, then into small cubes. Remove the crust from the slices of bread and cut each into 4 strips.
2. Butter the ramekins (or cocottes), then distribute the spinach, crack an egg on top and add 1 tbsp of cream.
3. Season with salt and pepper and distribute the cubes of chorizo.
4. Place the ramekins in an ovenproof dish.
5. Add a little hot water to the dish.
6. Bake for 6 to 10 minutes.
7. Keep a close eye on the cooking! The egg yolks should not cook. While cooking, prepare the toast soldiers.
8. Melt the 20g of butter in a large skillet.
9. As soon as it foams, place the strips of bread in the skillet and turn them several times until they have a nice golden color.
10. Peel the garlic clove, cut it in half, remove the germ and gently rub the toast soldiers with it.
11. Remove the eggs from the oven and serve with the garlic toast soldiers. A recipe created by Marque Repère.
