Eggplant Parmesan Gratin

Instructions

  • 1.   Preheat the broiler. Arrange the eggplant slices on a baking sheet and spray them with oil. Broil for 2 to 3 minutes on each side, until they soften. Preheat the oven to 190 °C (375 °F).
  • 2.   Rub the inside of two gratin dishes with the cut garlic clove (or use one large dish). Pour half of the tomato passata (tomato puree) into the bottom of the dish. Arrange the eggplant slices on top, season, then add the remaining tomatoes. Sprinkle one tablespoon of breadcrumbs and one tablespoon of Parmesan on the surface of each dish. Bake for 20 to 25 minutes, until the top is golden brown.
