French Toast with Salted Caramel Sauce

Slices of buttery brioche, soaked in milk flavored with vanilla sugar. Gently pour salted caramel sauce, a dollop of whipped cream, and a sprinkle of cocoa for a pure indulgence. And what if, on this Wednesday, we indulge in some cozy comfort? Like on a Sunday, when we brunch and lazily relax at home. I wanted to make something that would bring us pleasure, something soft, sweet, and comforting. Something gentle, fragrant, and decadent. Enter the French toast. Slices of buttery brioche, soaked in milk flavored with vanilla sugar. Gently pour salted caramel sauce, a dollop of whipped cream, and a sprinkle of cocoa for a pure indulgence.

Instructions

  • 1.   Caramel sauce: Make a dry caramel. In a thick-bottomed saucepan, pour the granulated sugar and let it melt over medium heat. Do not stir it, do not touch it (no wooden spoon for stirring, etc.). At most, swirl the pan by holding the handle and making it spin lightly. When the caramel reaches your desired color, remove the saucepan from the heat.
    Incorporate 10cl of heavy cream (which you have heated slightly in the microwave. This prevents too much temperature shock when making caramel). Mix well. Add the butter in small pieces, a pinch of fleur de sel, and mix well with a wooden spoon.
    Return to medium heat and bring to a gentle boil, simmering for about 2 minutes. Remove from heat and let cool.
    When the caramel has cooled down, add 5cl of heavy cream, mix well, transfer to a jar, and refrigerate.
  • 2.   In a mixing bowl, beat the egg and add the milk and vanilla sugar. Whisk well to homogenize the mixture.

    In a frying pan, melt a knob of butter.

    Take a slice of brioche, dip one side into the milk mixture for 5 seconds, then flip and dip the other side for 5 seconds.
    Place the slice of brioche in the frying pan and cook one side until golden brown. Flip the slice of brioche and cook the other side until golden brown.
    Transfer to a serving plate.

    Repeat with the remaining slices of brioche.

    Finally, gently heat the caramel to make it more fluid, drizzle it over the slices of brioche, add a dollop of whipped cream, and sprinkle with some caramel-flavored cocoa powder, guaranteed delight.

  • 8 slice of sliced brioche
  • 1 egg
  • 20 cl of semi-skimmed milk
  • 1 bag of vanilla sugar
  • 1 whipped cream
  • Sauce de caramel beurre salé :
  • 100 g of powdered sugar
  • 10 cl of heavy cream
  • 5 cl of heavy cream
  • 30 g of salted butter
  • 1 pinch of flower of salt
